For the claw that re-grows - try stone crab and have a story to
tell!
Stone crab is a shellfish with a story. Poor thing gets amputated
and then thrown back in the Florida water to re-grow another one,
usually taking up to 18 months. Stone crab
is a survivor verging on becoming extinct and that's why there is
a legal ban on removing this seafood them from the water.
Instead fishermen are allowed to snap off one claw and return the
stone crab to sea. This one claw rule is important as the other
claw serves to defend against predators. As for the demand for this
shellfish; stone crab is considered a delicacy, and harvested from
mid October through mid May.
Less meaty claws are sold as "lights." The meat texture
of this seafood is firm and sweet. As far as serving, make sure
to include the stone crab's rugged biography along with the delicious
dipping sauce and serve cold.
