Cooking Roast Beef
Buy the highest quality grade of meat for making roast
beef such as prime or choice. Roast beef should be well marbled
with well shaped cuts. Choose cuts from the rib, sirloin, hindquarters,
and back of the animal. Each area will bring forth different results
so decide based upon your preferences and budget.
Roast beef will be unforgettable if you cook it to perfection!
The aim is to sear the outside, which should be nicely browned but
keep the inside tender and juicy. Some roasts must be cooked with
high heat. This is true of roast beef less than 5 inches across
from naturally tender cuts such as tenderloin. Larger roasts, such
as rib roasts, require a combination of high and low heat.
Roast beef can be cooked at high heat throughout cooking if you
desire a richly browned flavor. On the other hand, if you prefer
tender roast beef, roast at low heat. There are many wonderful cookbooks
