Maine lobster tails & lobster with a light vinaigrette for
a tasty meal
Grilling maine lobster tails and crab,
as with shellfish in general, can be tricky because it is easy to
dry out the meat. The good news however, is that if you overcook,
unlike if you over cook say swordfish on the grill, the lobster
tails will not fall apart.
So in grilling, make all attempts not to overcook and dry out.
To begin, preheat the gas grill for 15 minutes and when the exterior
of the lobster shell is slightly charred, it is done. (This is just
one way to cook lobster.)
After you've finished grilling your lobster tails, serve it with
a simple vinaigrette to your liking. Incorporate fresh lemon juice,
dijon mustard, fresh garlic, extra virgin olive oil, and a little
chicken stock. It is best to keep it simple because grilled shellfish
in general, has a lot of flavor
