Good espresso begins with the right grind
Properly prepared gourmet
coffee such as espresso is strong, but not bitter. If you're
looking to make great tasting espresso the way the pros do, make
sure you have the right equipment.
It is best to make your espresso using a burr grinder or an espresso
grinder when using an espresso machine. The grind is crucial because
if it's too coarse your beverages will be thin and weak. Conversely,
if the grind is too fine the coffee will be over extracted and bitter.
Espresso properly prepared, is approximately the size of a shot
glass. It will take between 20 to 25 seconds to brew in most espresso
machines and there should be darkish-brown foam (crema) on top.
Be sure not to force more water through the grounds or your espresso
will have a bitter taste.
