Crayfish is a Louisiana seafood favorite that can be shipped to

Most crayfish caught in Louisiana is
consumed by its inhabitants. They eat nearly 10 million pounds annually.
The seafood Crayfish, also called crawfish or crawdads iin the South
is essentially freshwater shrimp that adds distinct flavor to popular

Crayfish is found worldwide and fished and farmed commercially
on West and Gulf Coasts. These small shellfish most closely resemble
lobster, but in miniature form. Like lobster, crawdads are sought
after live, but you can also purchase them frozen online.
When you buy live crayfish make sure to pick out the dead ones
before cooking. If they are bought frozen, they should be whole
and individual, tiny claws and all. To store live ones, place a
damp cloth over them and refrigerate no longer than 2 days.
To prepare crayfish you can easily boil them, which takes about
5 minutes. Most of the meat is in the tail; to get at it, simply
twist off the tail and split it. Also delicious are the juices and
creamy orange/ white fat found in the head and between the body
and tail.
