There are thousands of edible crabs throughout the world yet only a handful of well known types: Dungeness crab, blue crab, Alaskan king crab & stone crab are widely available in North America. Stone crabs are popular for eating only the claws. Caught in the waters of Florida and the Gulf coast, they are legally protected from being removed from the water. As a trade off, fishermen can remove only 1 claw, which will regenerate. To eat the claw, hit with a hammer and pick out the meat. Great served with a light vinaigrette.

King Crabs:

These crabs are popular for their delicious crab legs and claws. Caught in the waters of Alaska these crabs are mostly sold as crab legs which is where most of the meat is located. Cooking is simply reheating by grilling or steaming. Great served with a light vinaigrette.
