lobster
Cooking lobster is just a matter of deciding on which cooking
technique to use
Broiled lobster
Cooking lobster in the broiler is done
by, and I'm sorry to say this, but yes, killing the lobster by inserting
a sharp knife where the head meets the shell. Turn the cooking lobster
on its back and make a deep cut through the length of the body with
a sharp-pointed knife. Then spread the lobster in half and remove
the black line and the stomach. If you find roe or green soft matter
(tomalley) leave both as they are delicious. Next, crack the claw
shells with a hammer. Drizzle melted butter over the body. Place
the rack in the broiler meat side up, and broil for approximately
15 minutes. Serve with melted butter.
Grilled lobster with Lemon, Garlic and Olive Oil
Cooking lobster on the grill is a fabulous way to prepare lobster.
To get started cooking lobster make sure that your grill rack is
clean and place it as close to the heat source as possible. Next
preheat your grill to medium. Kill lobster, same as above, split
in half but make sure to leave them attached by the hinge of their
shell. Remove the head sac and intestines. With the back of a knife,
crack the legs and claws slightly. Sprinkle the cooking lobster
with salt and pepper to taste while in a separate bowl combine olive
oil and minced garlic to brush on lobster. Place lobster shell side
down and place an inverted pie or roasting pan over him. Grill until
the flesh is opaque which will take about 10 minutes. Serve with
lemon and parsley.
