buy fresh clams from your local grocer's seafood counter. Make sure
all of the shells are closed tightly. If the shell is open slightly,
lightly tap on the shell a few times. If the shell does not snap
shut, it means that the clam is dead and should not be used.
Clams can also be purchased either frozen or in a can. Buying clams
in this form might not be your preference, but you aren't risking
a 'bad' fresh clam. Paralytic shellfish poisoning (PSP) is a small
risk you take in purchasing fresh clams, but there remains a danger
when consuming the fresh variety.
