Chocolate truffles are King?
No, chocolate truffles are not so much king to the chocolate lover,
rather queen. Either way, it's bestowing a compliment. The original
truffle didn't vary much as they do today. Then it was a simple
ganache (ganache, pronounced ganahsh, is melted chocolate and cream)
ball rolled in cocoa powder or tempered chocolated creating what
looked to be similar to a truffle mushroom - hence the name.
Tempered Chocolate
Here is the tricky part of creating these chocolate delicacies
- tempering the chocolate. It has to be done at just the right temperature
to achieve the desired texture which later becomes the crunchy surface
around the soft ganache center. It is possible to skip this step
and use cocoa powder, powdered sugar or nuts.
While, I can't imagine there exists a chocolate lover out there
who does not rank a chocolate truffle as something savory and sublime,
these are not necessarily the chocolates that we consume regularly.
